There are bouyancy jackets provided for non-swimmers, and lots of knee-deep water to play in for those who aren't confident. You can also do the dolphin swimming with a jacket on, which is perfect for non-swimmers. You will still have a fantastic time!
You cannot stay at Discovery Cove itself, but there are two Partner hotels that are only a 5 minute drive away, which are the DoubleTree by Hilton Orlando at Seaworld, and the Residence Inn at SeaWorld.
Yes, Discovery Cove is excellent for toddlers, offering a whole host of activities to keep them entertained, and they can join in with all of the main experiences, such as swimming with dolphins (ages 6+). You can also head over to the SeaWorld and Aquatica theme parks which have fantastic rides for younger children.
No Discovery Cove is part of SeaWorld Parks & Entertainment and is not part of Walt Disney World Orlando.

The areas where fish swim are not heated (including the salt water lagoon, and the dolphins' pool), but the big lazy river is heated to around 80 degrees.

Yes towels are included with your Discovery Cove ticket. They also provide a mask, snorkel, and beach chairs to relax on. You also get all you can eat and drink from the park food and drink stalls.
